Ingredients:

  • 4 salmon fillets

  • 1 cup almonds, finely chopped

  • 2 lemons (zest and juice)

  • 2 cups cooked brown rice

  • 2 cups broccoli florets

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions:

Preheat the oven to 375°F (190°C).

  1. Mix chopped almonds, lemon zest, salt, and pepper in a bowl.

  2. Brush salmon fillets with olive oil, then press almond mixture onto the top.

  3. Place salmon on a baking sheet and bake for 15-20 minutes.

  4. Steam broccoli until tender.

  5. Serve salmon with brown rice and broccoli, drizzling lemon juice on top.
