Ingredients:
4 salmon fillets
1 cup almonds, finely chopped
2 lemons (zest and juice)
2 cups cooked brown rice
2 cups broccoli florets
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 375°F (190°C).
Mix chopped almonds, lemon zest, salt, and pepper in a bowl.
Brush salmon fillets with olive oil, then press almond mixture onto the top.
Place salmon on a baking sheet and bake for 15-20 minutes.
Steam broccoli until tender.
Serve salmon with brown rice and broccoli, drizzling lemon juice on top.
