Kumquat Honey Marmalade.
Ingredients:
1 pound (450 grams) of kumquats, washed and thinly sliced (seeds removed)
1 cup (240 ml) of honey
1 cup (240 ml) of water
1 tablespoon of lemon juice
Instructions:
Preparation: Begin by washing the kumquats thoroughly. Thinly slice them, removing any seeds as you go.
Cooking: In a large saucepan, combine the sliced kumquats, honey, water, and lemon juice. Stir well to mix the ingredients.
Simmering: Bring the mixture to a boil over medium-high heat. Once it reaches a boil, reduce the heat to low and let it simmer. Stir occasionally to prevent sticking.
Thickening: Continue to simmer the mixture for about 45-60 minutes, or until it thickens to your desired consistency. You can test the consistency by placing a small amount on a chilled plate; if it sets, it's ready.
Canning: Once the marmalade has thickened, remove it from the heat and let it cool slightly. Pour the marmalade into sterilized jars, leaving about 1/4 inch of headspace. Seal the jars with lids.
Storing: Allow the jars to cool completely before storing them in the refrigerator. The marmalade can be stored in the refrigerator for up to 3 months.
