Garlic Ginger Tofu Stir-Fry
Ingredients:
1 block tofu, cubed
2 sweet potatoes, peeled and diced
1 bunch kale, chopped
2 tablespoons soy sauce
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
2 tablespoons sesame oil,
Sesame seeds
Instructions: Heat sesame oil in a large pan over medium heat. Add garlic and ginger, sauté for 1 minute. Add tofu cubes and cook until golden brown. Add sweet potatoes and cook until tender. Stir in kale and soy sauce, cooking until kale wilts. Sprinkle with sesame seeds. Serve hot
