Mediterranean Chicken Quinoa Bowl
Ingredients:
2 chicken breasts, grilled and sliced
1 cup cooked quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup feta cheese, crumbled
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
In a large bowl, combine quinoa, cherry tomatoes, cucumber, and feta cheese. Add grilled chicken slices. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour dressing over the quinoa mixture and toss gently. Garnish with fresh parsley before serving.
