Energy Balls

Ingredients:

  • 1 cup dried figs, chopped

  • 1 cup rolled oats

  • 1/2 cup almond butter or any nut butter of your choice

  • 1/4 cup honey or maple syrup

  • 1/2 cup chopped nuts (almonds, walnuts, or pecans)

  • 1/4 cup chia seeds

  • 1/4 cup ground flaxseed

  • 1 teaspoon vanilla extract

  • A pinch of salt

Instructions:

  1. Prepare the Figs:

    • If the dried figs are too hard, soak them in warm water for 10 minutes to soften. Drain and chop them into small pieces.

  2. Mix Dry Ingredients:

    • In a large mixing bowl, combine the chopped figs, rolled oats, chopped nuts, chia seeds, and ground flaxseed.

  3. Add Wet Ingredients:

    • Add the almond butter, honey or maple syrup, vanilla extract, and a pinch of salt to the dry ingredients.

  4. Combine:

    • Mix everything together thoroughly until you get a sticky, cohesive mixture. If the mixture is too dry, you can add a bit more nut butter or honey to reach the desired consistency.

  5. Shape the Balls:

    • Using your hands, roll the mixture into small balls (about 1 inch in diameter). Place them on a baking sheet lined with parchment paper.

  6. Chill:

    • Refrigerate the energy balls for at least 30 minutes to let them set. Once set, they can be stored in an airtight container in the fridge for up to a week.
