Energy Balls
Ingredients:
1 cup dried figs, chopped
1 cup rolled oats
1/2 cup almond butter or any nut butter of your choice
1/4 cup honey or maple syrup
1/2 cup chopped nuts (almonds, walnuts, or pecans)
1/4 cup chia seeds
1/4 cup ground flaxseed
1 teaspoon vanilla extract
A pinch of salt
Instructions:
Prepare the Figs:
If the dried figs are too hard, soak them in warm water for 10 minutes to soften. Drain and chop them into small pieces.
Mix Dry Ingredients:
In a large mixing bowl, combine the chopped figs, rolled oats, chopped nuts, chia seeds, and ground flaxseed.
Add Wet Ingredients:
Add the almond butter, honey or maple syrup, vanilla extract, and a pinch of salt to the dry ingredients.
Combine:
Mix everything together thoroughly until you get a sticky, cohesive mixture. If the mixture is too dry, you can add a bit more nut butter or honey to reach the desired consistency.
Shape the Balls:
Using your hands, roll the mixture into small balls (about 1 inch in diameter). Place them on a baking sheet lined with parchment paper.
Chill:
Refrigerate the energy balls for at least 30 minutes to let them set. Once set, they can be stored in an airtight container in the fridge for up to a week.
