Millet and Vegetable Stir-Fry

Ingredients:

  • 1 cup millet

  • 2 cups water

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 bell pepper, chopped

  • 1 carrot, julienned

  • 1 zucchini, chopped

  • 1 cup broccoli florets

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • Salt and pepper to taste

  • Sesame seeds for garnish

Instructions:

  1. Rinse the millet under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the millet, reduce the heat, cover, and simmer for 20 minutes or until the water is absorbed and the millet is tender.

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.

  3. Add the bell pepper, carrot, zucchini, and broccoli. Cook for 5-7 minutes until the vegetables are tender but still crisp.

  4. Stir in the cooked millet, soy sauce, and sesame oil. Season with salt and pepper to taste.
