Millet and Vegetable Stir-Fry
Ingredients:
1 cup millet
2 cups water
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 carrot, julienned
1 zucchini, chopped
1 cup broccoli florets
2 tablespoons soy sauce
1 tablespoon sesame oil
Salt and pepper to taste
Sesame seeds for garnish
Instructions:
Rinse the millet under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the millet, reduce the heat, cover, and simmer for 20 minutes or until the water is absorbed and the millet is tender.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
Add the bell pepper, carrot, zucchini, and broccoli. Cook for 5-7 minutes until the vegetables are tender but still crisp.
Stir in the cooked millet, soy sauce, and sesame oil. Season with salt and pepper to taste.
